In the late 1800’s (around 1879) The David Jones Brewery and Malting Establishment operated a brewery on his property located at the westerly corner or Webster Avenue and Union Avenue. It was called the Lager Bier Brewery. He also operated a Brewery for Ale in Manhattan. He died in 1881 and the Brewery and his estate were settled some years later. I will include links to an old map showing the location of the Brewery and his farm, New York Times articles from 1885 describing his heirs and division of property and a picture of the Brewery. What I am trying to find is his living Heirs with the purpose of trying to find out if the original lager and ale recipes exist. I have spent many hours researching but can’t seem to come up with anything.
Look at the railway just above the lowest point of the U. The Brewery is at the corner of Webster and Union

I’ll give it a shot
Jerry,
I like this project and sleuthing is my middle name. I’ll see if I can dig anything up.

Interesting dispute
No closer to finding the disposition of the malted recipes, but here’s an article that provides a vivid description of a dispute between the brewery and NR residents:

Thanks, that was very interesting
I’ll have to look at an old map, not sure where burling brook is.
I did find this though, a little more info on the brother and sisters of D. Jones and a little about their children.

Add’l research
http://www.findagrave.com/cgi-bin/fg.cgi?page=gr&GRid=21770836 — it seems a number of the Thayers mentioned in that court case are listed on here. They were added by someone named Marc Thayer III relatively recently. His e-mail contact is on that website — I’d start with him. Let me know what you find out.
It appears that David Jones made good on his promise to let the waste-waters of his brewery flow freely through the streets of West New Rochelle.
