  • Talk of the Sound Commentary: generally very good inspections, a few problems like food maintained at temperatures outside acceptable range, flies present in kitchen, but overall this is by far and away the best cafeteria in the District.

Critical items “red”: At this time, small meatballs were found between 89-100 degrees F. during hot holding in steam table. During hot holding food must be maintained at a temperature off 140 degrees F. or greater. Meatballs voluntarily discarded at this time.
Non-critical items “blue”: Salad food dispensing utensil handle in contact with lettuce, not permitted.
Non critical items “blue”: Freezer door gaskets unclean/black mold like substance present.
Non critical items “blue”: Kitchen handwash sink hot water not provided and faucets do not allow for proper hand washing.
Inspectors notes: All cold holding temperatures acceptable. Reinspect blue violations on (no date given).
