Critical items “red”: Commercially processed precooked hamburgers are not heated to 140 degrees F. at this time and hamburgers are not being held above 140 degrees F, during hot holding. Actual temperature 90-122 degrees F. At this time, hamburgers were reheated before they were served.

Inspectors notes Sanitary gloves and utensils available and in use/ 0-220-degree F. termometer available and in use. Service table moved weekely to sweep and sanitize underneath. All food pre-prepared – lettuce pre-washed and shredded. All temperatures on steam table sufficient. Bleach available and in use. Extermination services two to three times a month service.
Other notes Inspection of taco procedures: All food comes from high school, no raw foods, no prep really involved, no leftovers, food out only for lunch period.
